Sweet and Savory Duo of Tapenades

Happy end of the summer! Though this might not be the easiest time of the year, I’m trying to look on the bright side of things as I enjoy the last days I have left at home. The beginning of a new school year is always full of new exciting things, and faces. So I guess it’s not that bad to go back after all…

But in the meantime, I’m still trying to spend as much time with my friends and family as possible, and avoid locking myself up in the kitchen for hours. In those times of “kitchen-time restraint”, I try to come up with really easy and quick homemade recipes. So today I opted for a delicious duo of Tapenades, or olive spreads, to enjoy with some crispy toasted bread in only minutes! Just mix it all up in a food processor as follows, and you’re done! (doesn’t it look like an abstract painting?)

Since it can be hard to satisfy everyone’s taste with only one appetizer, I went for two different olive spreads. The first one is a twist on the classic southern French spread, that’s very subtly sweetened by figs, inspired by a recent lunch at a small riverside shack in Paris. The second one is a more classic take on the recipe, with a salty, two-colored, olive spread. I hope you’ll like both as much as I do! Though these aren’t the prettiest, they sure are delicious as a snack, or right before dinner with a glass of red wine. Bon appétit!

Total time: about 5 minutes each

Ingredients for the Fig-Olive Tapenade:

  • 1/2 can black olives, pitted
  • 2 fresh figs
  • 3 tsp olive oil
  • 1 tsp balsamic vinegar
  • Salt & pepper

Ingredients for the Green-Black Olive Tapenade

  • 1/2 can black olives, pitted
  • 1/2 can green olives, pitted
  • 2 tsp capers
  • 2 anchovies’ filets
  • 2 tbsp olive oil
  • Salt & pepper

Directions for each spread:

  1. Toast some bread.
  2. Meanwhile, add all of the ingredients in a food processor, and mix until you reach your desired texture. For a very smooth spread, add some more olive oil. Enjoy with the freshly toasted bread!

Temps total: environ 5 minutes par recette

Ingrédients pour la Tapenade Figues-Olives:

  • 1/2 bocal d’olives noires, dénoyautées
  • 2 figues fraîches
  • 3 c.c d’huile d’olive
  • 1 c.c de vinaigre balsamique
  • sel & poivre

Ingrédients pour la Tapenade d’Olives Vertes-Noires

  • 1/2 bocal d’olives noires, dénoyautées
  • 1/2 bocal d’olives vertes, dénoyautées
  • 2 c.c de câpres
  • 2 filets d’anchois
  • 2 c.s d’huile d’olive
  • sel & poivre

Etapes pour chaque tapenade:

  1. Mettez du pain à griller.
  2. Pendant ce temps, ajoutez tous les ingrédients dans le bol d’un robot et mixez jusqu’à obtenir la consistance souhaitée. Pour une tapenade bien lisse, rajoutez un peu d’huile. Régalez-vous en la servant sur du pain tout juste grillé.
