3-Ingredients Banana Pancakes




Happy new year everyone! As 2016 came around, I realized that I had been living under a rock. Do 3-ingredients banana pancakes ring a bell to anyone? I mean… sign me up for that! I’m not sure how it took me so long to stumble upon this recipe, but I finally did and HAD to try it immediately. So without further ado, here it goes.

The best description for these pancakes comes from the Kitchn‘s website, in saying that these are like the “center of french toast”. That’s it, and I can’t find a better way to describe them myself! They are moist and sweet, slightly custardy and dense, and even a little spongy. Yet, these are not doughy like regular pancakes. Indeed, the lack of flour will not trick your brain to satisfy your carbs-cravings… That being said, they remain AMAZING.

Another bonus point for these pancakes is how ridiculously easy they are to make. Only takes a handful of minutes from start to finish. Just crack the eggs and whisk ’em into the mashed bananas. Speak about a perfect dish for a morning after a night out. NYE problems? This handy recipe is particularly fitting going into this new year… I promise it’ll do the job just right. Plus this comforting breakfast lacks the guilt of regular pancakes. What’s not to like about that?

In reality, this recipe really only requires 2-ingredients, eggs and a banana, but adding baking powder makes them so much fluffier. Without it, they are slightly too dense to my liking, and taste slightly more “eggy”! Good thing is you can still customize them just like you would with regular pancakes. Starting with the base, I added raspberries to mine so that their acidity would cut into the sweetness of the banana. Blueberries or chocolate chips are also a sure bet. Don’t forget to top them with syrup, or as I did here, maple butter. Totally going bananas for these! Bon appétit!


Total time: 10 minutes


  • 1 medium banana
  • 2 eggs
  • 1/8 tsp baking powder
  • a dash of cinnamon
  • a dollop of maple butter (or syrup)
  • addt’l toppings: fresh/frozen berries (I like raspberries), chocolate chips, nuts…


  1. Cut the banana into chunks, and mash it with a fork until it looks like pudding.
  2. Whisk the eggs and stir them into the mashed banana until homogenous.
  3. Add the cinnamon and baking powder.
  4. Heat a griddle and spray it with vegetable oil. Pour the batter a small laddle at a time.
  5. Let each pancake brown for about 1 minute, sprinkle the toppings of your choice, and flip them very slowly. Brown the other side for another minute or so, and pile the pancakes into a stack.
  6. Repeat the process until you run out of batter. Slather the stack with maple butter and enjoy!


Pancakes à la Banane, 3-Ingrédients”


Temps Total: 10 minutes


  • 1 banane de taille moyenne
  • 2 œufs
  • 1/8 c.c de levure
  • une pincée de cannelle
  • une noix de beurre d’érable (ou du sirop)
  • garnitures au choix: fruits rouge frais/congelés (framboises pour moi!), pépites de chocolat, noix…


  1. Coupez la banane en morceaux et écrasez la jusqu’à obtenir une texture lisse.
  2. Battez les œufs et incorporez-les à la banane écrasée.
  3. Ajoutez la cannelle et la levure. Mélangez bien.
  4. Faites chauffer de l’huile végétale dans une poêle et versez des petites louches de pâte.
  5. Laissez les pancakes dorer environ 1 minute, garnissez-les comme vous le souhaitez, et retournez-les délicatement à l’aide d’une spatule.  Laissez l’autre côté dorer pendant encore 1 minute et empilez les pancakes sur une assiette.
  6. Répétez jusqu’à ne plus avoir de pâte, tartinez de beurre d’érable et dégustez!
