Raspberry Overnight Oats with Chia Seeds

Summer’s not over. Not yet. I’m not ready for that and in order to celebrate, I decided to revisit an old favorite of mine, a.k.a. my go-to summer breakfast. I last posted a recipe for overnight oats over a year ago (Banana-Mixed Berries anyone?), and while the base recipe basically hasn’t changed, I made three major changes to it, by adding:

  • chia seeds
  • frozen berries
  • quick cooking oats instead of old fashioned

Seriously… It’s partly due to the fact that it’s the holiday-season but I also simply can’t control myself when my dad’s cooking. Fridge Friday: Avocado Chicken Salad, No-Mayo

Another day, another toast! With chicken salad, no mayo anyone? This toast recipe is the last one I’ll post for a while, but as I previously mentioned open-faced sandwiches have been my go-to rushed meals recently. And since this chicken salad is so good, I figured that I’d share it with you even if I recently posted another toast recipe (combining Scrambled eggs, broccoli rabe, and shiitake!).
