Happy new year everyone! As 2016 came around, I realized that I had been living under a rock. Do 3-ingredients banana pancakes ring a bell to anyone? I mean… sign me up for that! I’m not sure how it took me so long to stumble upon this recipe, but I finally did and HAD to try it immediately. So without further ado, here it goes.

The best description for these pancakes comes from the Kitchn‘s website, in saying that these are like the “center of french toast”. That’s it, and I can’t find a better way to describe them myself! They are moist and sweet, slightly custardy and dense, and even a little spongy. Yet, these are not doughy like regular pancakes. Indeed, the lack of flour will not trick your brain to satisfy your carbs-cravings… That being said, they remain AMAZING.

A couple weeks ago, I went apple picking for the first time. Not that I had never picked an apple right from a tree before, but I had never driven to an orchard with friends to do exclusively that. As it turns out, apple picking is a quintessential fall activity here in America. And after this past week, I finally understand why.

We wandered through tree-lined alleys and filled buckets and buckets of apples – while eating our fair share right from the trees. Trust me, it doesn’t get any sweeter than biting right into them! Continue reading “Warm Fall Apple Crumble”

Summer’s not over. Not yet. I’m not ready for that and in order to celebrate, I decided to revisit an old favorite of mine, a.k.a. my go-to summer breakfast. I last posted a recipe for overnight oats over a year ago (Banana-Mixed Berries anyone?), and while the base recipe basically hasn’t changed, I made three major changes to it, by adding:

  • chia seeds
  • frozen berries
  • quick cooking oats instead of old fashioned

Although these changes might seem minimal, they transformed my morning overnight oats experience. Continue reading “Raspberry Overnight Oats with Chia Seeds”

The Best Hummus You Will Ever Make

Ambitious title, I know. But I hope I’ve enticed your appetite, because you’re in for a treat!

Hummus is one of those small things in life that make me happy. I can’t say no to this dip. Luckily for me, there’s an amazing place to get delicious hummus in Philadelphia. It’s a hummusiya called Dizengoff, where they serve it with different toppings, changing daily. Some days you can get lamb, fava beans, or hard boiled eggs, and others you can expect avocado, chicken skin or beets for example. They come up with really creative flavors that pair so well with their hummus. They also make it extremely creamy, with lots of tahini just how I like it. Finally, they serve it with freshly baked homemade pitas that are like no other you’ve tasted before. It’s such a great combo I could eat it all day everyday. Finals season is upon us, so I thought I should “celebrate” by posting one of my favorite study snacks on the blog. For all of my college students readers out there, this one’s a keeper. I mean, espresso, chocolate and granola all at once??? Talk about a match made in heaven! Continue reading “Choco-Espresso Study Granola with Quinoa”
