Another week, and two other sweet potato recipes to come! Using the second third of my *gigantic* spud, I chose to make some delicious Sweet Potato-Spinach-Millet patties. For these, I was inspired by two recipes: the quinoa patties from Heidi Swanson’s cookbook, and the pumpkin patties from My Darling Lemon-Thyme. Both of them provided me with a great base for some kitchen-improvisation. Another day, another toast! With chicken salad, no mayo anyone? This toast recipe is the last one I’ll post for a while, but as I previously mentioned open-faced sandwiches have been my go-to rushed meals recently. And since this chicken salad is so good, I figured that I’d share it with you even if I recently posted another toast recipe (combining Scrambled eggs, broccoli rabe, and shiitake!).
Mama mia! It’s been a while since I last posted a pasta recipe, which is funny considering I eat it at least once a week. I figured Fridge Friday would be a good occasion to post one, since I usually turn a lot of leftovers into pasta sauces. So for this second edition, I came up with a twist on a classic bolognese, using leftover beef.
I’m sure you know the feeling. The feeling when you get home from work on a Friday night, only to find an empty fridge, with nothing to eat. It’s so frustrating. But is there really nothing to eat? Look again, because I’m sure there has to be a little something left over from a previous meal. You just need a creative way to reuse it so that you don’t find yourself eating the same dish over and over again. Let me help you with that!
