As mentioned in my previous post, these past few months have been full of culinary discoveries and experiments for me. Not only have I tried new recipes in Mexico and while traveling across the US, but I also experimented a lot from the comfort of my own kitchen. Most notably, I owe my biggest discovery of them all to one of my roommates, who recently became a vegetarian. Indeed, this eye-opening experience came straight from my stove, to the greatest pleasure of my taste buds. If you haven’t guessed by now, I am talking about tofu! I know… that ecstatic comment probably didn’t make you think about that ingredient. I can barely wait for Thanksgiving break! Only two days of classes left until I get to leave for NY and enjoy some well deserved time off with my roommate and her family. Over the past three years, this has become one of my favorite traditions of the fall semester, and one that I look forward to from the very beginning of the school year. It’s finally my favorite time of the semester here in Philly, aka Restaurant Week! Basically for two weeks, twice a year, most of the best restaurants in town offer a $35 three-course menu. It’s an amazing deal for college students to have a taste of delicious places in town, that would otherwise be out of reach. I always anxiously await the dates to make reservations well in advance and discover a new place every time. Continue reading “Warm Green Quinoa Salad with Avocado, Lima Beans, and Feta Cheese”

Hi all!

Long time, no post. I just got back from an amazing trip to Turkey and brought back a ton of recipes and inspiration for delicious dishes with me. I didn’t want to spend too much time cooking today, since I had plenty to catch up on at home, so I decided to dive into that “one-pot” frenzy that’s been going around the web.
