One Sweet Potato, Three Meals: Wasabi Noodle Soup with Oyster Mushrooms
For this final edition of my sweet potato series, I decided I’d make a quick stop to Asia and incorporate the last third of my potato into a delicious noodle soup. Since I hadn’t roasted it earlier, I figured I’d switch it up a bit and boil it instead. Now the thing is that boiled potatoes usually taste quite bland. So I made the best out of it and came up with this amazing noodle soup where it actually makes sense to have them boiled. Score! One Sweet Potato, Three Meals: Sweet Potato-Millet Patties with Spinach
Another week, and two other sweet potato recipes to come! Using the second third of my *gigantic* spud, I chose to make some delicious Sweet Potato-Spinach-Millet patties. For these, I was inspired by two recipes: the quinoa patties from Heidi Swanson’s cookbook, and the pumpkin patties from My Darling Lemon-Thyme. Both of them provided me with a great base for some kitchen-improvisation. There’s something so comforting about sweet potatoes. They never fail to brighten up a dish. The subtle sweetness and the richness they bring to the plate always hits the spot for me. Sweet Potato Gnocchi with a Brown Butter and Sage Sauce
A few weeks ago, I took a great cooking class at school! Not only was I extremely happy to learn new recipes, but I also loved the idea of cooking at school. Unfortunately, we can’t ordinarily take cooking classes here. Wouldn’t it be amazing to bake a cake, grill a steak, or poach an egg for credit? I certainly would love to! And I truly believe that cooking is a lifelong skill that should be taught like sciences.
