Grilled Zucchini Roll-Ups with Black Truffle Ricotta

It’s time for me to share another one of my food obsessions, and this one is called “ricotta”. Just the sound of it fills my mind with so many dreams of fluffy creamy deliciousness. If a restaurant offers some kind of homemade ricotta appetizer, you can be sure that I will order it right away. My favorite preparation being “sprinkled with sea salt and freshly ground pepper, and a light drizzle of fruity olive oil”. This past week-end was an amazing one! I just got back from a great trip to Montreal, where I got to visit a friend of mine over break! I had only been there once before and had forgotten most of it, so it felt really good to go back and rediscover the city. I really enjoyed the beautiful crisp weather, the fall color palette of the trees on Mont-Royal, walking across old city and chinatown, and obviously lots of Canadian delicacies. Stuffed Round Zucchini with Pesto Quinoa

What do you love the most about seasons? Is it the changing weather, temperature, fashion, or the color of the leaves in the trees? For me, it’s the flavorful seasonal produce that come with each one of them. Throughout the Spring season specifically, many of my favorite fruits and vegetables become perfectly ripe. That’s when I like to spend some time at the grocery store, and get lost in the fresh produce aisle. As I was walking there the other day actually, I saw a cart filled with round zucchini and couldn’t resist. They looked so good, and round, and green, and perfect. Don’t you agree?

Saadia’s Moroccan Chicken with Lemon, Green Olives and Squash

Though this isn’t the prettiest dish there is, it may be one of my all time favorites. Actually, there is nothing I ever want to change about this recipe. It blends so many wonderful flavors in one plate, that it really blows my mind (and taste buds)! In case you were wondering, it is titled after its owner, who happily gave it to me after noticing how fast I cleaned my plate the first time I ate it. Indeed, Saadia knows that her chicken is my favorite, which is why she immediately shared it with me.
