Fridge Friday: Avocado Chicken Salad, No-Mayo

Another day, another toast! With chicken salad, no mayo anyone? This toast recipe is the last one I’ll post for a while, but as I previously mentioned open-faced sandwiches have been my go-to rushed meals recently. Simple is best. I’ve said it before, but that’s my kitchen-motto. This recipe is a perfect example of that idea. When you think about it, there not much that’s more simple than toast. Yet, however simple the base may be, you can make the tastiest toppings ever, and end up with a really sophisticated dish.

Every time I come back to the US, I’m mostly vegetarian. Why “mostly”? Well, because truth be told… I love meat! I really do. In fact I’ll even say that nothing comes close to a really well prepared, cooked, and seasoned steak. Fridge Friday: Chicken Banh Mi Sandwich with Pickled Vegetables

I’m sure you know the feeling. The feeling when you get home from work on a Friday night, only to find an empty fridge, with nothing to eat. It’s so frustrating. But is there really nothing to eat? Look again, because I’m sure there has to be a little something left over from a previous meal. You just need a creative way to reuse it so that you don’t find yourself eating the same dish over and over again. Let me help you with that!
